Clichéd as it is, I love the Scarface sound track so so much, probably because of GTA.

The soundtrack to Harlan County, USA has got some of the most heartbreaking/inspiring music ever.

Beyond the more obvious Morricone choices, I'd recommend his work on Investigation of a Citizen Above Suspision, Four Flies on Grey Velvet, and even Le Professionel (a middling-to-average Belmondo vehicle for when he went all buff). As far as other spaghetti Westerns go, you can't top the theme song from Django.

I also dig the material Philippe D'Aram has done for Jean Rollin, especially on Les Deux Orpheline Vampires - it's his usual mournful violin work with some tasteful synth thrown in. Javier Navarette of Pan's Labyrinth fame also turned in a great soundtrack for the completely depressing In A Glass Cage, don't know if you can track it down without watching the film though so psych yourself up to feel like shit about everything for about a week if you're that interested.
